Zwickerwin*, quality assembly
At Nìderwind, we compose a wine as we would a dish or a symphony :-).
Alsace wine is best known for its emblematic grape varieties. Gewurztraminer, Riesling and Sylvaner in particular are strong hallmarks of the region. You'll find them almost nowhere else in France.
I choose to combine these differences to create complete, complex organic wines.
My ambition is to make great blended, dry wines from high-quality organic and local viticulture.
*: in Alsatian, zwicker = mixture and win = wine.
City wine
I chose to locate production in the city to be closer to the consumer and because Strasbourg is a capital on the move, modern and open to Europe.
Thanks to this proximity, wine-making, which usually takes place far from the eyes of city-dwellers, can be shown and explained to the curious who want to understand what they are consuming.
Fair Trade
I work closely with a number of talented Alsatian winemakers whose production is certified organic or biodynamic. I've known them and their vines for a long time.
I build lasting, fair relationships with my winemaking partners, where all parties win, especially the consumer. It's only by establishing this relationship of trust that I can access high-quality grapes produced under optimal conditions.
By transforming their grapes into great wines, I can offer these men and women a fair wage.
Oenology: cooking with wine
Wine is like a child: in the first moments of its life, it needs guidance and support.
My aim is to accompany the grapes through their transformation into wine, intervening as little as possible, but nevertheless ensuring the quality and loyalty of the end product.
I'm convinced that in wine-making, as in cooking, technique should be imperceptible, and focus solely on enhancing the natural product. But just as in the kitchen, technique is essential to obtaining quality products.
