Les arbres penchés

Pairs well with shellfish (razor clams, cockles, specialty oysters, scallops), white fish, or goat or sheep cheese. An oceanic, invigorating wine with a salty finish.

La chambre

Pairs perfectly with gravlax, sweetbreads, or poultry in cream sauce. Also ideal with raclette cheese. What it needs is creaminess. An enveloping, smooth wine, but with depth and vitality.

Lumières

A bright and intense cuvée. The ideal wine to accompany roasted white meats, grilled mackerel, or hard cow's milk cheeses (Comté, Cantal, Parmesan). A wine that brings out the best in food. My favorite.

The unspeakable things

A bold and complex creation. For daring dishes: spicy meat, Asian cuisine, Bleu de Gex cheese. My favorite comment about this wine: "This is the first time I've ever enjoyed an orange wine!" It defies expectations.
